2007
Vintage
The ripening season for the 2007 vintage was very typical of the Mudgee region, with
warm and hot days balanced by very cool nights. The difference between day and night
temperatures was sometimes up to 24 degrees C, and this combination proved ideal
ripening our grapes, giving the wine an excellent balance of delicate aromas and ripe,
juicy fresh fruit flavours.
Winemaking
We created this wine from cabernet sauvignon grown around our estate in the Mudgee
region of New South Wales. The fruit was picked in February, and the grapes gently
pressed to extract colour and fruit flavours, and the juice was fermented at cool
temperatures to ensure the delicate aromas and flavours were well-preserved in the
resulting wine.
Colour
Salmon pink with bright red purple hues.
Bouquet
Vibrant mulberry, cherry and floral aromas.
Palate
The crisp acidity is balanced with red fruit flavours which gives a long clean finish to the
wine.
Suggested Food
Prosciutto, fig and goat’s cheese salad.
Cellaring
A ready to drink wine, enjoy whilst young and fresh.
