Winemaking
Selected harvesting ensured the grapes were in excellent condition and possessed the desired fruit flavours. After a cool primary fermentation the Blanc de Blancs was bottle fermented for 6 months on lees prior to bottling and labeling.

Colour
Very pale straw with a distinct green tinge. Light delicate bubbles.

Bouquet
Fresh lemon, lime and citrus aromas with a slight complex edge.

Palate
Delightful lemon and apple fruit flavours with light bubbles that fill the mouth.

Suggested Food
Enjoy with barbequed crayfish tails with a twist of lemon.

Cellaring
A very attractive wine, the blanc de blancs has longevity and will reward with careful cellaring up to 2010.
